Tilt lenses allow for very unique perspectives and creative bokeh. The reason lenses with tilt functions are so useful is because they allow you to control depth of field independently of aperture. This allows you to get a deep depth of field while still using a wide aperture to maintain a fast shutter speed and/or low ISO. Or, in the other direction, you can create the popular "miniature" photos, which make real-world scenes look as if they are tiny scenes comprised of toys.
